weekend of cooking

I received two quarts of strawberries with my veggie delivery and I figured I better make something, so I cooked for my friend Charlotte.  Saturday nite, we made strawberry shortcake from scratch!  They turned out great – here’s the recipe we used:

Biscuits from scratch
3 cups all purpose flour
3 Tbsp granulated sugar
1 1/2 Tbsp baking powder
3/4 teaspoon salt
12 Tbsp butter, cut into small pieces
1 1/2 cups heavy cream
1 1/2 teaspoons vanilla extract

Just mix everything dry, cut in the butter, then add the cream, make biscuits and bake 425F till brown.

I had some heavy cream left over, and we just whipped it up and added a little sugar and the strawberries.  It really was worth the trouble – delicious!  I also found the ultimate in ice cream this weekend,

in brown butter almond brittle – it’s based on the traditional Norwegian recipe krokan.

Krokan : caramelized sugar mixed with butter and almonds . Krokan uses hook anise , almond, where the pieces are small, brown spots, or filling and flavoring in sweets or cakes.

There’s no going back – ice cream with butter?!?!  It was worth every calorie!  I would highly recommend it.

With the Grains

This is a peppercorn-blueberry-mint syrup.  I could imagine myself pouring it over all kinds of things.  Yummy!

All in all – a great weekend.  The weather was decent, I ate a lot of good food, oh, and saw a horrible movie.  That new Tim Burton movie Dark Shadows?  Awful.  Don’t waste your money, definitely a renter….I did however finish Something Wicked This Way Comes which was excellent, a perfect read  for the summer 🙂

    Awesome, awesome, awesome! I like any new food ideas. Oh and I thought that Tim Burton movie looked not so good, so I’m glad I trusted my instincts on that one.

    No ice cream for us, 40 dollars for shipping! Haha I knew it would be but I couldn’t help but see how much.

      Hmmmm….well, I could buy some of that almond brittle and we could make some when I come to visit! Yeah – check out that lady’s blog – her recipes look amazing!
