Tasty Yummy Beef Brisket

I love food you can slap into a crockpot and walk away from. I’m always ridiculously busy, so that works out.  Here’s something that transforms a mediocre cut of meat into something tasty.

1 4-5 pound brisket
6-12 garlic cloves
2 teaspoons salt
1 teaspoon black pepper
2 teaspoons lemon zest
1/4 cup coconut oil
2 to 3 cups of water
Juice from three lemons
4 to 6 leeks, OR green onions (more of those since they’re smaller) sliced the long way
1/4 cup finely chopped parsley

Smash up garlic, lemon zest, salt, & pepper together.  Sear meat in pan with coconut oil + spices, on all sides.  Transfer to crock pot.  Pour water in searing pan, get off yummy gummy bits then pour watery stuff over your brisket,  add lemon juice and leeks/onions.  Cook for 8 hours on low in crockpot.  Sprinkle chopped parsley over top.  Serve.  I have to tell you – something about lemon and beef – amazing!!

    I made a caribou roast the other day. It also had all Alaska grown vegetables in it! I was pretty proud of that, not gonna lie…
